Dulce de Leche Granola
Ingredients:
3 cups rolled oats
1 cup chopped nuts (such as almonds, pecans, or walnuts)
1/2 cup shredded coconut (optional)
1/4 cup honey or maple syrup
1/4 cup melted coconut oil
1/4 cup dulce de leche
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup dried fruit (such as raisins, cranberries, or chopped apricots)
Instructions:
Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, combine the rolled oats, chopped nuts, and shredded coconut (if using).
In a separate bowl, whisk together the honey or maple syrup, melted coconut oil or vegetable oil, dulce de leche, vanilla extract, cinnamon, and salt until well combined and smooth.
Pour the wet mixture over the dry ingredients in the large mixing bowl. Stir until all the oats and nuts are evenly coated.
Spread the granola mixture evenly onto the prepared baking sheet.
Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the granola is golden brown and crisp.
Remove from the oven and let the granola cool completely on the baking sheet. It will continue to crisp up as it cools. Once cooled, stir in the dried fruit.
Store the dulce de leche granola in an airtight container at room temperature for up to two weeks.
