Dulce de Leche Crepes
Ingredients:
For the Crepes:
1 cup all-purpose flour
2 large eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons melted butter
Additional butter for the pan
For the Filling:
1 cup dulce de leche (store-bought or homemade)
Optional Toppings:
Whipped cream
Fresh berries
Powdered sugar
Chopped nuts
Instructions:
1. Prepare the Crepe Batter:
In a large mixing bowl, whisk together the flour and the eggs.
Gradually add in the milk and water, stirring to combine.
Add the salt and melted butter; beat until smooth.
Cover the bowl and let the batter rest for about 30 minutes. This allows the flour to absorb the liquid fully, resulting in better crepes.
2. Cook the Crepes:
Heat a lightly buttered non-stick skillet or crepe pan over medium-high heat.
Pour about 1/4 cup of batter onto the pan, tilting the pan in a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
Remove the crepe from the pan and place it on a plate. Repeat with the remaining batter, adding more butter to the pan as needed.
3. Fill the Crepes:
Spread a generous spoonful of dulce de leche over one half of each crepe.
Fold the crepe in half, then in half again to form a triangle. Arrange the filled crepes on a serving plate.
Serve the crepes warm, topped with your choice of whipped cream, fresh berries, powdered sugar, or chopped nuts.
